 HYDERABAD BIRYANI

Hyderabad  Biryani
Ingredients:
1.Basmati Rice : 1/2 kg
2.Mutton 1/4 kg
3.Curds: 1 cup
4.Onions  medium size :2
5.Ginger: 2 inches
6.garlic : 5 to 6 pearls
7.Green chillies: 3 medium size
8.cloves :3
9.Cinnamon: 2 pieces of 2 inches
10.Star annise: 1
11.cardamom :3
12.shajira: 1/4 teaspoon
13.red chilly powder: 1 teaspoon
14.Turmeric: 1/4 teaspoon
15.coriander leaves 
16.mint leaves 
17.cooking oil : 2 tablespoons
18.Ghee: 2 tablespoons
salt : as required
19.lime : 1/2

Method:
1.Wash rice and let it soak.
2.Wash mutton.
3.Grind ginger,garlic and green chillies
4.Cut Onions into slices and mix a salt into it. 
5. Heat oil in a pan and fry onions  to crispy brown
6. Divide onion 3/4 and 1/4.
7. After onion cools grind the 3/4 with little water
8.Now Marinate the motton with curds,ginger,garlic and green chilly paste,  Powder ingredients 8 to 12 and add,add chilly powder, turmeric,salt,lime juice,coriander,mint onion paste and oil... let it marinate for 25 to 30 minutes.
9. Boil 8 glasses of water. Add 3 cloves,2 pieces of cinnamon, 4 cardamoms, few bay leaves ( dont powder) when it starts boiling add the soaked basmati rice. let it cook little more than half. Drain out the water and spread the rice to cool.
10.Cook the marinated meat in broad mouth cooker. You can add 1 cup water.
11. once the meat is cooked. Spread the cooled cooked rice in top. on top of the rice spread coriander,mint and fried onions . Lastly add the 2 tablespoons of ghee.close the cooker lid with weight and cook for 8 to 10 minutes on low flame. 

10 minutes over😊 Aromatic Hyderabad Biryani ready😄😄 Serve it hot with curd & onion raitha. Don’t forget to squeeze lime over the biryani served.💕💕💕
