Corn (maize ) + Egg -Pan Cakes

Corn + Egg Pan cakes

Ingredients:
Corn ( maize) : 1 cup
1.Green Chillies : 2
2.Ginger : 2 inch piece
3.Cinnamon : 1 stick
4.Cloves : 3
Rice powder : 1 table spoon
Onions : 3
Coriander leaves : 1 bunch
Eggs : 3
Salt : As required

Method:
If you are using the dry corn soak them over night or if the corn is fresh wash the seeds and grind them with the ingredients 1 to 4 to a coarse batter.
Add to it rice powder, finely chopped onions, Washed and finely cut coriander leaves,beaten eggs and salt.
Sprinkle oil on a pan, put 1 ladle of the batter sprinkle oil around wait to roast& then turn the pan cake to the other side to roast remove and serve them hot with tomato sauce or chutney of your choice.

Instant Sambar


Instant Sambar

This is very useful for the youngsters who are staying away from home & forced to cook. Try this and enjoy the yummy Sambar. This dry mixture can be stored for one month.

Ingredients:
1. Tuvar Dal( split red gram ) -1 cup
2. Dry red chillies - 5 to 6
3. Dhania ( Coriander seeds ) - 1 tbsp
4. Methi ( fenugreek seeds ) - 1/2 tsp
5. Tamrind powder - 2 to 3 tbsp ( you will get in food world or food bazzar )
6. Salt - 2 tbsp
7. Asafoetida - 3 pinches.

For seasoning:
mustard - 1 tsp
urid dal ( split black or bengal gram ) - 1tsp
curry leaves - 2 stem ( washed and dried )
Oil - 1tbsp

Method:
1 .Fry the ingredients 1 to 4 each separately in a dry pan without oil, let it cool. grind it dry with out adding water, add salt, tamrind powder and asafoetida to it.
2. Heat oil in a pan, add mustard let it spurt, add urid dal, fry and lastly add curry leaves fry well and let it cool
3. Add the seasoning to the dry sambar mix and transfer it to air tight container and use when needed.
4. To make sambar for 1 person take 1 tbsp of this mixture mix it with 1/2 cup water.
5. Heat 1/2 tsp oil in a pan add 1/2 onion ( cut into small pieces ) fry andthen add 1 tomato ( cut into small pieces ) fry for sometime, add the sambar mix to it little by little while you are stirring it. let it boil for sometime. ( if it is too thick to you can add some more water to it )
Your yummy sambar is ready in no time.
Note: You can cook vegetables like carrot, beans, brinjal ( egg Plant) and add to the sambar.

Banana and Egg - Sweet Pan Cakes

Ingredients:
Maida - 200 gms
Rice flour - 100 gms
Jaggery - 200 gms
Banana - 1
Egg - 1
Milk - 1 cup
Cashew nut pieces and raisins as required
Cardamom 1/2 teaspoon.
Cooking soda 1 pinch
Ghee for frying

Method:
1. Mix maida and rice flour together, add powdered jaggery, mashed banana, beaten egg, soda,cardamom powder, milk and make a thick batter( like idli batter)
2. Fry cashewnuts and raisins in little ghee and add to it.
3. Heat the pan put one ladle of the batter spread a spoon of ghee around it and cover it with a lid. cook on slow fire.
4.After sometime turn it to the other side roast it and serve it hot.

Aapam



Aapam

Ingredients:
Rice - 2 glasses
urid dal - 1 hand full
methi - 1/4 teaspoon

1.Wash the above ingredients and soak for 2 hours and grind with a hand full of cooked rice add required salt and mix well with your hand and leave it to ferment for 8 to 10 hours.
2.Mix 2 pinches of cooking soda with water and add it to the batter and mix well.
3.Heat non-stick kadai pour one ladle ( big spoon) of the batter and turn it around the kadai, close it with a lid, after 2 minutes spread ghee around the Aapam and remove serve it with korma (veg or Non veg ), coconut Chutney or coconut milk mixed with sugar.
4. You can also put an egg on the batter in the pan and turn it around, spread ghee on it,close it with a lid & cookon slow fire,remove when roasted.

Gulab Jamun




Gulab Juman

Ingrdients:-
Fresh Kova (without sugar)-250 gms
Maida - 100 gms
Sugar - 300 gms
Water - 3 cups
cooking soda - 2 pinch
curds - 1 table spoon
Refined oil to fry

Method :-
1.Grind the kova in the mixi to remove the lumps.
2.Fry maida lightly with little ghee and leave it to cool.
3.Collect the kova from mixi jar into a bowl, add soda,curds and maida knead it nicely to get dough and leave it for half a hour.
4.Mix sugar with water and make syrup.
5.Make round balls or long shape with the dough.
6.Fry all the balls on low fire till golden brown.
7.Arrange all the jamuns in a dish and pour the warm sugar syrup on top and leave it closed for sometime.
8.Your Yummy Jamuns are ready.
